  • DESCRIPTION: Pepper comes from a perennial, woody, climbing vine native to south-western India but is now cultivated in Africa, Brazil, China, Sri Lanka and Vietnam. It grows to a height of 2-5 metres and uses surrounding trees and structures to support itself. As the pepper berries develop, the spikes lengthen to between 7-15cm.
  • SUGGESTED USE: Green peppercorns are used in Asian cuisine, especially in Thai dishes but are sadly an under rated ingredient in European kitchens. Try adding them to cream based sauces to accompany steak, chicken and fish. Add them to the water when poaching any meat or fish, or use in place of black peppercorns to impart a fresh, green and subtler pepperiness to your dish.

The leaves are entire, alternate, 5-10cm in length and cordately ovate in shape, dark glossy-green in colour. The flowers are small, yellowy-white to greenish-white in colour and present in clusters of long drooping spikes 4-8cm in length in the leaf nodes. As the pepper berries develop, the spikes lengthen to between 7-15cm. Interesting Fact: Did you know that all colours of peppercorns come from the same plant, it's the way that they are dried and processed that dictates the colour of corns? Green peppercorns are made from the unripe fruits known as drupes, they are treated. Dried green peppercorns are treated in a way that retains the green colour, such as by freeze-drying. The flavour of green peppercorns is considered to be more piquant and fresher with a herbal 'green' flavour than black peppercorns. Ingredients: Green Peppercorns.
