With the coronavirus, the supermarkets no longer appear to have bread flour. I have been making my own bread for over 30 years and did not want to miss out on baking my own.Plain four is readily available. (Other countries call this all purpose flour.) So I researched and found that one needs to add wheat gluten to plain flour to make the bread flour. The rate is one teaspoonful to one cup of flour. (I use the cup measures as they are easier to manage than scales.) I thought I may have trouble mixing it up, but this was not the case.I measured my three cups of flour into a bowl, added three teaspoons full of wheat gluten and stirred vigourously. I put this in my bread machine (yes, these days I am lazy) and waited.The bread came out perfect. I will not be buying bread flour anymore. And this kg of wheat gluten will last a long, long time.

I use this to make seitan at home and found it works well. The bag is a bit awkward to reseal so I just fold it and use a bag clip. Have bought this several times as it is good value for money.

As a vegan you try to vary your diet as much as possible... You also have to ensure you are getting enough protein. Suffiec to say that I use this product to make seitan and have bought this brand multiple times as it is a reasonable price and good quality. Crucially for my household, this has no warnings on about nut traces so we can actually use it in a house with someone with a severe nut allergy. (This can be rare in the wholefoods world where MANY products have such warnings!)
